I have recently arrived from the UK with my family. I am the new Operations Manager at Vanilla Blue. My wife works within the transport sector and loves her new role. I have 5 children; the 3 older ones are still in the UK pursing the career paths they have chosen. Our 2 little ones just love Australia. I have worked in the hospitality all my working life I achieved the position of Head Chef within the Hilton Hotel group. Before leaving for Australia I was the Operations Director in the UK serving 27,000 meal per day for a bespoke contract caterer.

I am Sydney born and raised and have worked in hospitality for the past 10 year. I have a lot of experience in functions and events, also working on red carpet events for Event Cinemas George Street. I joined Vanilla Blue in May this year as the Catering Manager.

Well, as a kid I was fairly sure I could ride my BMX with my eyes closed. After 3 trips with mum to the Emergency department for knocking myself out I gave up.

I have worked in hospitality for the past 20 years. Having worked in numerous kitchens I have seen a range of restaurant and catering operations that provide a great depth of experience to draw on. I held my first head Chef position when I was 19 years old and have continued to learn and grown from there. I am blessed with a gorgeous family including 2 beautiful daughters, a newly born son and my lovely wife Michelle. Life is pretty busy with 3 little people, but given the chance I like to get out on my mountain biking with friends.

I have a big focus of health and fitness in my life, enjoying training daily to keep strong. I started my career in hospitality as an apprentice at the Marriot Hotel, 18 years ago. I have cooked in a variety of Sydney locations including fine dining, cafes and catering companies. I started a number of years ago at Vanilla Blue as a driver, delivering catering. I am now the Dispatch Manager.
I’ve been at VB for the past 7 years. I started as a driver.
I’m the Dispatch Manager, organising and managing 7 catering van each day. We deliver over 400 orders each week.
My death row dinner would be - Fresh handmade pasta with Blue Swimmer crab, garlic, olive oil and chilli
